Curried Chicken Salad |
Recipe Type: Side Dish, Entree Salad
Serves: 4
Ingredients
- 2 cups diced cooked chicken
- 1 rib celery, diced
- 2 green onions, thinly sliced, optional
- 1/4 cup slived almonds, toasted
- 1/3 cup golden raisins
- 1 tablespoon lemon juice
- 1/2 to 3/4 cup mayonnaise, or to taste
- 1/2 to 1 teaspoon curry powder, or more, to taste
- salt and pepper, to taste
Instructions
- In a medium bowl, combine the diced chicken, celery, onion, almonds, and raisins. Toss with the lemon juice and 1/2 cup mayonnaise. Add more mayonnaise, as needed, then add curry powder, salt, and pepper, to taste.
- Serve on lettuce or in pita pockets or sandwich rolls.
