Ingredients
  • pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix
  • 1/2
  • cup cold butter
  • 5
  • cups frozen sliced peaches, thawed and drained, or 1 can (29 oz) sliced peaches, drained
Instructions
  1. Heat oven to 375°F. In large bowl, place cookie mix. Cut in butter, using pastry blender or fork, until mixture looks like coarse crumbs.
  2. In ungreased 8-inch square baking dish or 2-quart round casserole, place peaches. Sprinkle cookie mixture over peaches.
  3. Bake 25 to 30 minutes or until topping is golden brown. Serve warm or cool.

  • 1 (6 count) package English muffins
Instructions
  1. Mix together the first 5 ingredients.
  2. Slice muffins in half horizontal.
  3. Spread each muffin half with the cheeze/crab mixture.
  4. Place under broiler and brown (WATCH CAREFULLY SO IT DOESN’T BURN).
  5. Cut each muffin half into quarters when cool enough to handle.

  • 8 cups finely diced cabbage (about 1 head)
  • 1/4 cup diced carrot
  • 2 tablespoons minced onions

  • 1/2 cup mayonnaise
  • 1/4 cup buttermilk

Instructions
  1. Cabbage and carrots must be finely diced. (I use fine shredder disc on food processor) .
  2. Pour cabbage and carrot mixture into large bowl and stir in minced onions.
  3. Using regular blade on food processor process remaining ingredients until smooth.
  4. Pour over vegetable mixture and mix thoroughly.
  5. Cover bowl and refrigerate several hours or overnight before serving.

Ingredients
  • 1/3 cup olive oil
  • 3 cloves minced garlic
  • 1 pound shrimp, peeled, de-veined and tails removed
  • 2/3 cup clam juice or chicken broth
  • 1/3 cup dry white wine
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons each lemon juice and chopped parsley
  • 1/4 teaspoon each dried basil leaves and dried oregano leaves, crushed
  • 1 package linguine pasta (8 ounce), cooked and drained
Instructions
  1. Heat oil in large skillet over medium-high heat. Add garlic; reduce heat to low. Simmer until garlic is tender. Add shrimp in same skillet and cook over medium-low heat until opaque. Remove; reserve liquid in pan. Add clam juice; bring to a boil.
  2. Add wine; cook over medium-high heat 3 minutes, stirring constantly. Reduce heat to low; add cream, stirring constantly. Add cheese; stir until smooth. Cook until thickened. Add shrimp to sauce. Heat through.
  3. Add remaining ingredients except linguine. Pour over linguine in large bowl; toss gently to coat. Serve with additional grated Parmesan cheese if desired.

Ingredients
  • 2 Jello Instant Vanilla Pudding Mix (small packages)
  • 3 cups milk
  • 8 ounces non-dairy whipped topping
  • 1 (16 ounce) box graham crackers (you will have some leftovers)
  • 1 (15 ounce) container chocolate frosting
Instructions
  1. Mix together vanilla pudding mix and milk.
  2. Fold in whipped topping.
  3. Line 9 x 13 pan with one layer of graham crackers.
  4. Put half of the pudding mixture over the graham crackers.
  5. Place a second layer of graham crackers over the pudding mixture.
  6. Put the remaining pudding mixture over the graham crackers.
  7. Place a third layer of graham crackers over the pudding mixture.
  8. Heat the tub of frosting in the microwave for 30 seconds to soften. (Don’t forget to remove the foil seal or you’ll get fireworks).
  9. Spread frosting on the top of the last layer of graham crackers.
  10. Cover with plastic wrap and let set a couple hours or overnight in the refrigerator.
  11. Cut in squares.

  1. Arrange in alternate layers cucumber, zucchini & onions.

  3. Drain any water formed from cucumbers before adding the dressing.
  4. Allow vegetables to marinate in the dressing at least 1 hour before serving.

  • 1 tablespoon rice wine
  • 1/4 cup water
  • 1/2 teaspoon sesame oil

  • 1 1/2 tablespoons soy sauce
  • 1 1/2 tablespoons water
  • 5 tablespoons sugar
  • 5 tablespoons white vinegar
  • 1 orange, zest of
Instructions
  1. Place chicken pieces in large bowl.
  2. Stir in egg, salt, pepper and 1 tablespoon oil and mix well.
  3. Stir cornstarch and flour together.
  4. Mix flour mixture and egg mixture.
  5. Add chicken pieces, stirring to coat.
  6. Heat oil for deep-frying in wok or deep-fryer to 375 degrees.
  7. Add chicken, small batches at a time, and fry 3 to 4 minutes or until golden crisp.
  8. (Do not overcook chicken).
  9. Remove chicken from oil with slotted spoon and drain on paper towels; set aside.
  10. Clean wok and heat 15 seconds over high heat.
  11. Add 1 tablespoon oil.
  12. Add ginger and garlic and stir-fry until fragrant; about 10 seconds.
  13. Add and stir-fry crushed chiles and green onions.
  14. Add rice wine and stir 3 seconds.
  15. Add Orange Sauce and bring to boil.
  16. Add cooked chicken, stirring until well mixed.
  17. Stir water into remaining 1 tablespoon cornstarch until smooth and add to chicken.
  18. Heat until sauce is thickned.
  19. Stir in sesame oil and orange zest if desired.
  20. Serve over jasmine rice.

Ingredients
  • 6 cups chicken broth, divided
  • 3 tablespoons olive oil, divided
  • 1 pound portobello mushrooms, thinly sliced
  • 1 pound white mushrooms, thinly sliced
  • 2 shallots, diced
  • 1 1/2 cups Arborio rice
  • 1/2 cup dry white wine
  • sea salt to taste
  • freshly ground black pepper to taste
  • 3 tablespoons finely chopped chives
  • 4 tablespoons butter
  • 1/3 cup freshly grated Parmesan cheese
Instructions
  1. In a saucepan, warm the broth over low heat.
  2. Warm 2 tablespoons olive oil in a large saucepan over medium-high heat. Stir in the mushrooms, and cook until soft, about 3 minutes. Remove mushrooms and their liquid, and set aside.
  3. Add 1 tablespoon olive oil to skillet, and stir in the shallots. Cook 1 minute. Add rice, stirring to coat with oil, about 2 minutes. When the rice has taken on a pale, golden color, pour in wine, stirring constantly until the wine is fully absorbed. Add 1/2 cup broth to the rice, and stir until the broth is absorbed. Continue adding broth 1/2 cup at a time, stirring continuously, until the liquid is absorbed and the rice is al dente, about 15 to 20 minutes.
  4. Remove from heat, and stir in mushrooms with their liquid, butter, chives, and parmesan. Season with salt and pepper to taste.

Ingredients
  • 4 pounds crabmeat
  • 1 egg
  • 1 tablespoon lemon zest
  • 1/8 teaspoon Old Bay Seasoning TM
  • 2 tablespoons fresh basil, chopped
  • 1 cup saltine crackers, crushed
  • 1 cup mayonnaise
  • 4 tablespoons vegetable oil
  • 3 egg yolks
  • 1/8 teaspoon Old Bay Seasoning TM
  • 3 ounces fresh lime juice
  • 2 tablespoons chopped fresh cilantro
  • salt and pepper to taste
  • 1 3/4 cups vegetable oil
Instructions
  1. In a large mixing bowl, combine crabmeat, 1 egg, lemon zest, Old Bay Seasoning, chopped basil, crushed crackers and mayonnaise. Mix thoroughly.
  2. Form 5 ounce patties out of the crab mixture (should make about 16 patties), and chill until cold before cooking.
  3. In a skillet, heat 4 tablespoons of oil over medium heat. Saute the crab cakes for 4 minutes on each side or until golden brown.
  4. For the sauce, in a blender place the egg yolks, Old Bay Seasoning, lime juice, cilantro, salt and pepper. Blend for 10 seconds. Keeping the blender running, slowly drizzle the oil into the blender. Blend until sauce is creamy.
