Chocolate Chunk Bread Pudding

Chocolate Chunk Bread Pudding
Recipe Type: Dessert
Serves: 2
Ingredients
  • 1 3/4 cups (1/2-inch) cubed Hawaiian sweet bread
  • 2/3 cup 2% reduced-fat milk
  • 2 tablespoons sugar
  • 1 1/2 tablespoons unsweetened cocoa
  • 1 tablespoon Kahlúa (coffee-flavored liqueur)
  • 1/2 teaspoon vanilla extract
  • 1 large egg, lightly beaten
  • Cooking spray
  • 1 ounce semisweet chocolate, coarsely chopped
  • 2 tablespoons frozen fat-free whipped topping, thawed
Instructions
  1. Preheat oven to 350°.
  2. Arrange bread cubes in a single layer on a baking sheet. Bake at 350° for 5 minutes or until toasted. Remove bread from oven; decrease oven temperature to 325°.
  3. Combine milk and next 5 ingredients (milk through egg) in a medium bowl, stirring well with a whisk. Add bread, tossing gently to coat. Cover and chill 30 minutes or up to 4 hours.
  4. Divide half of bread mixture evenly between 2 (6-ounce) ramekins or custard cups coated with cooking spray; sprinkle evenly with half of chocolate. Divide remaining bread mixture between ramekins; top with remaining chocolate.
  5. Place ramekins in an 8-inch square baking pan; add hot water to pan to a depth of 1 inch. Bake at 325° for 35 minutes or until set. Serve each pudding warm with 1 tablespoon whipped topping.

Miso Grilled Vegetables

Miso Grilled Vegetables
Recipe Type: Side Dish
Serves: 6
Ingredients
  • 2 tablespoons red or white/yellow miso (soybean paste)
  • 1 tablespoon lukewarm water
  • 3 tablespoons olive oil
  • 1 pound zucchini, cut lengthwise into 1/3-inch-thick slices
  • 8 ounces Japanese eggplant, cut lengthwise into 1/3-inch-thick slices
  • 1 red bell pepper, cut into 6 pieces
  • 1 orange bell pepper, cut into 6 pieces
  • 1 small red onion, cut into wedges
  • Cooking spray
  • 2 tablespoons fresh mint leaves
  • 1 lime, cut into wedges
Instructions
  1. Preheat grill to high heat.
  2. Combine miso and 1 tablespoon water. Gradually add oil, stirring with a whisk. Place zucchini, eggplant, and bell peppers on a jelly-roll pan. Add 5 tablespoons miso mixture; toss to coat. Brush onion with remaining miso mixture.
  3. Place vegetables on a grill rack coated with cooking spray. Grill zucchini, eggplant, and bell pepper 4 minutes on each side or until tender. Grill onion 6 minutes on each side or until tender. Sprinkle with mint. Serve with lime wedges.

Creole Chicken and Vegetables

Serves: 4
Ingredients
  • Cooking spray
  • 1 pound chicken breast tenders
  • 2 cups frozen pepper stir-fry (such as Bird’s Eye brand), thawed
  • 1 cup frozen cut okra, thawed
  • 3/4 cup thinly sliced celery
  • 3/4 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground red pepper
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon butter
Instructions
  1. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add chicken; cook 3 minutes on each side or until browned. Add pepper stir-fry and next 6 ingredients (through red pepper), stirring to combine. Pour tomatoes over chicken mixture; bring to a boil. Cover, reduce heat, and simmer 5 minutes. Uncover; cook 3 minutes. Add parsley and butter, stirring until butter melts.

Marinated Tomatoes With Basil Balsamic Vinegar
Recipe Type: Appetizer
Serves: 12
Ingredients
  • 1 small red onion, thinly sliced
  • 4 cups ice water
  • 3/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons water
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 garlic cloves, minced
  • 1/2 to 1 cup chopped fresh basil
  • 6 tomatoes, thinly sliced
  • Parmesan cheese curls (optional)
  • French bread (optional)
Instructions
  1. Combine onion slices and 4 cups ice water in a large bowl; let stand 30 minutes. Drain and pat dry with paper towels.
  2. Whisk together vinegar, olive oil, 2 tablespoons water, and next 4 ingredients. Stir in basil.
  3. Layer half of tomato slices in a shallow dish. Top with half of onion slices. Drizzle with half of dressing. Repeat with remaining tomato slices, onion slices, and dressing. Cover and chill 30 minutes.
  4. Sprinkle with Parmesan cheese curls, if desired, and serve with bread, if desired. Serve at room temperature.
  5. Note: Recipe may be prepared up to 3 hours ahead.
