- 1 3/4 cups (1/2-inch) cubed Hawaiian sweet bread
- 2/3 cup 2% reduced-fat milk
- 2 tablespoons sugar
- 1 1/2 tablespoons unsweetened cocoa
- 1 tablespoon Kahlúa (coffee-flavored liqueur)
- 1/2 teaspoon vanilla extract
- 1 large egg, lightly beaten
- Cooking spray
- 1 ounce semisweet chocolate, coarsely chopped
- 2 tablespoons frozen fat-free whipped topping, thawed
- Preheat oven to 350°.
- Arrange bread cubes in a single layer on a baking sheet. Bake at 350° for 5 minutes or until toasted. Remove bread from oven; decrease oven temperature to 325°.
- Combine milk and next 5 ingredients (milk through egg) in a medium bowl, stirring well with a whisk. Add bread, tossing gently to coat. Cover and chill 30 minutes or up to 4 hours.
- Divide half of bread mixture evenly between 2 (6-ounce) ramekins or custard cups coated with cooking spray; sprinkle evenly with half of chocolate. Divide remaining bread mixture between ramekins; top with remaining chocolate.
- Place ramekins in an 8-inch square baking pan; add hot water to pan to a depth of 1 inch. Bake at 325° for 35 minutes or until set. Serve each pudding warm with 1 tablespoon whipped topping.

- 2 tablespoons red or white/yellow miso (soybean paste)
- 1 tablespoon lukewarm water
- 3 tablespoons olive oil
- 1 pound zucchini, cut lengthwise into 1/3-inch-thick slices
- 8 ounces Japanese eggplant, cut lengthwise into 1/3-inch-thick slices
- 1 red bell pepper, cut into 6 pieces
- 1 orange bell pepper, cut into 6 pieces
- 1 small red onion, cut into wedges
- Cooking spray
- 2 tablespoons fresh mint leaves
- 1 lime, cut into wedges
- Preheat grill to high heat.
- Combine miso and 1 tablespoon water. Gradually add oil, stirring with a whisk. Place zucchini, eggplant, and bell peppers on a jelly-roll pan. Add 5 tablespoons miso mixture; toss to coat. Brush onion with remaining miso mixture.
- Place vegetables on a grill rack coated with cooking spray. Grill zucchini, eggplant, and bell pepper 4 minutes on each side or until tender. Grill onion 6 minutes on each side or until tender. Sprinkle with mint. Serve with lime wedges.

- Cooking spray
- 1 pound chicken breast tenders
- 2 cups frozen pepper stir-fry (such as Bird’s Eye brand), thawed
- 1 cup frozen cut okra, thawed
- 3/4 cup thinly sliced celery
- 3/4 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground red pepper
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1/4 cup chopped fresh parsley
- 1 tablespoon butter
- Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add chicken; cook 3 minutes on each side or until browned. Add pepper stir-fry and next 6 ingredients (through red pepper), stirring to combine. Pour tomatoes over chicken mixture; bring to a boil. Cover, reduce heat, and simmer 5 minutes. Uncover; cook 3 minutes. Add parsley and butter, stirring until butter melts.

Marinated Tomatoes With Basil Balsamic Vinegar |
- 1 small red onion, thinly sliced
- 4 cups ice water
- 3/4 cup balsamic vinegar
- 1/4 cup olive oil
- 2 tablespoons water
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 garlic cloves, minced
- 1/2 to 1 cup chopped fresh basil
- 6 tomatoes, thinly sliced
- Parmesan cheese curls (optional)
- French bread (optional)
- Combine onion slices and 4 cups ice water in a large bowl; let stand 30 minutes. Drain and pat dry with paper towels.
- Whisk together vinegar, olive oil, 2 tablespoons water, and next 4 ingredients. Stir in basil.
- Layer half of tomato slices in a shallow dish. Top with half of onion slices. Drizzle with half of dressing. Repeat with remaining tomato slices, onion slices, and dressing. Cover and chill 30 minutes.
- Sprinkle with Parmesan cheese curls, if desired, and serve with bread, if desired. Serve at room temperature.
- Note: Recipe may be prepared up to 3 hours ahead.
